Minestrone soup(Healthy Italian soup)

Rasoikaswaad By Hitesh Pandey

A healthy version of minestrone whipped in a jiffy with loads of fiber rich veggies and perked with oregano and parsley.


  1. 1/4 cup elbow macaroni
  2. 1 tsp dried oregano
  3. 1 1/2 tsp oil
  4. 2 tbsp finely chopped onion
  5. 2 bay leaves
  6. 1 cup finelly chopped carrots
  7. 2 tbsp finelly chopped cauliflower
  8. 2 tbsp green peas
  9. 3/4 cup peeled and finely chopped sweet potatoes
  10. 1 tbsp processed mozzarella cheese
  11. 2 tbsp corn kernels
  12. 1 tbsp cornflour dissolved in 1/2 cup water
  13. 2 tbsp chopped tomatoes
  14. 4 tbsp fresh tomato purée
  15. to taste Salt and pepper
  16. For garnish-
  17. 2 tbsp finally chopped coriander
  18. 1 tsp grated cheese


  1. Heat the oil in a deep non-stick pan, add onions and bay leaves and sauté on a medium flame for 30 seconds.

  2. Add carrots, cauliflower, green peas and 5 cups water, mix well and cook on medium flame for 2-3 minutes while stirring occasionally.

  3. Add sweet potatoes, corn kernels, cheese and macaroni, mix well and cook on a medium flame for 7-8 minutes till Veggies are tender while stirring occasionally.

  4. Add cornflour water mixture, tomatoes, tomato purée, oregano, salt and pepper. Mix well and cook for another 1-2 minutes while stirring continuously.

  5. Serve hot garnished with coriander and cheese.
