Kanchipuram Dosa
2bowl Dosa batter
1chopped onion
1carrot slicely cut
1 beetroot thinly sliced
1 green chilli chopped
2 tblspn Idly Podi
1 bowl of potato masala
Oil for cooking
Ingredients for making Potato masala
2 boiled potatoes
1slicely cut onion
2 green chillies chopped
1/2 tspn mustard seeds
1/2 tspn cumin seeds
1tspn chopped ginger
6 to 8 curry leaves
1 1/2 tblspn oil
Salt as required
1/2 tspn haldi powder
First of all we have to make potato masala.
So take a kadai and heat it.now add oil..when oil is heated add mustard seeds and cumin seeds.when it starts spluttering add curry leaves, green chilli, ginger and saute it for half minute. In a mean while mash the boil potatoes.
Now add onion and saute it..after sauting onion add salt, haldi powder and mashed potatoes..mix it well.now put 2 tblspn of water in it and mix it very well so that the masala is combined well.off the flame keep the masala aside….
Now take another kadai adding 1 tblspn oil in it. Now add chopped onion, beetroot and carrot.saute it and add salt. Mix it and stirr continously..when it becomes soft then off the flame..
For Kanchipuram Dosa heat the tawa or non stick pan.brush it with oil if needed.otherwise don’t..Now pour half katori batter on it spread it in a round shape..put few drops of oil on the dosa and around the dosa.put.spread little bit idly podi on it..
When the dosa is cooked and gets brown then spread vegetable stuffing on it..after veggie spread 2 tblspn potato masala on the dosa..now slowly slowly fold the Dosa when it becomes crispy…
Serve this Kanchipuram Dosa with Sambhar and Coconut Chutney…I have added green chutney also..
