Creamy Veggie balls Beetroot Soup
Preparation time- 20 minutes
Cooking time- 10 minutes
Total time- 30 minutes
Serving- 4

Ingredients
1. 2 beetroot chopped
2. 1 capsicum finely chopped
3. 2 tablespoons corn
4. 1 tablespoons red chilli powder
5. 1 tablespoon butter
6. 1 tablespoon cornflour
7. 2 tablespoons cream
8. 1 teaspoon oregano
9. Salt as per taste

Method-
1. First take capsicum, corn, chopped beetroot and add cornflour, oregano, salt, red chilli powder and mix it nicely then make ball and baked in Appam Patra.
2. Then peeled and chopped beetroot then take grinder put beetroot and 1 cup water and grind it.
3. Then take 2 tablespoons water in bowl and put cornflour and mix it nicely.
4. After that take pan put butter heat it then add mixture and give one boil add red chilli powder and salt and mix it.
5. Then add cornflour mixture and again give one boil. Then add veggie balls and give one boil.
6. Switch off the flame. Then add cream and mix it properly.
7. After that sprinkle oregano.

Risotto cutlets
Preparation time- 20 minutes
Cooking time- 10 minutes
Total time- 30 minutes
Serving- 4

Ingredients
1. 1 cup boiled rice
2. 1 finely chopped capsicum
3. tablespoons coriander leaves
4. 2 tablespoons dried breadcrumbs
5. 2 tablespoons grated parmesan cheese
6. 1 teaspoon Oregano
7. 1 teaspoon red chilli powder
8. 2 tablespoons cornflour
9. Oil for deep frying
10. Fresh Basil leaves for garnish

Method
1. Mix together rice, capsicum, coriander leaves, salt, oregano and 2 tablespoons grated cheese in a bowl. Add breadcrumbs and knead into a soft dough.
2. Mix together mozzarella cheese and red chilli in another bowl and make small balls.
3. Divide the dough into equal portions. Flatten each portion, place a cheese ball in the centre and shape into small balls.
4. Mix together cornflour and 2 tablespoons water to make mixture.
5. Dip each ball in mixture, coat in breadcrumbs and set aside.
6. Heat sufficient oil in a kadai. Deep-fry the balls till golden brown. Drain on absorbent paper.
7. Serve hot with Arrabiata sauce and basil leaves.

Arrabiata sauce
Preparation time- t minutes
Cooking time- 10 minutes
Total time- 15 minutes

Ingredients
1. 1 cup canned tomato puree
2. 1 cup fresh tomato puree
3. 2-3 tablespoons olive oil
4. 1 tablespoon chopped coriander
5. 1 teaspoon red chilli powder
6. Salt as per taste
7. 1 teaspoon sugar
8. 5-8 fresh basil leaves for garnishing

Method
1. Firstly heat olive oil in a non-stick pan. Add coriander leaves and sauté for a minute.
2. Then Add tomato puree, fresh tomato puree and mix it nicely.
3. Then add chilli powder, salt and sugar, mix it and cooked it for 5 minutes.
4. Garnish with basil leaves.

Cheesey Corn Balls
Preparation time- 10 minutes
Cooking time- 10 minutes
Total time- 20 minutes
Serving- 4

Ingredients
For Paste
1. 1 tablespoon all purpose flour
2. 1 tablespoon cornflour
Other Ingredients
3. 1 cup mashed Paneer
4. 1/2 cup boiled corn
5. 1/2 cup Grated mozerella cheese
6. 2 tablespoons finely chopped onion
7. 2 finely chopped green chillies
8. 1 tablespoon finely chopped coriander leaves
9. 1 teaspoon red chilli powder
10. 1 teaspoon Oregano
11. Salt as per taste
12. 1 tablespoon oil

Method-
For the paste
1. Firstly take all purpose flour and cornflour in and make paste with water.
2. Then put paneer, chesse, Onion, green chillies, coriander leaves, red chilli powder, oregano, salt and mix it nicely.
3. Now make small balls.
4. Then greased the Appam Patra and baked all Balls.

Beans Yoghurt Salad
Preparation time- 20 minutes
Cooking time- 5 minutes
Total time- 25 minutes
Serving- 4

Ingredients
1. 1 cup beans
2. 1 cup finely cut capsicum
3. 2 tablespoons Boiled corn
For the Dressing:
4. 1 Cup yogurt
5. 2 tablespoons mint leaves
6. Handful of Coriander leaves
7. 1 chopped tomato
8. 1 teaspoon chopped garlic and ginger
9. 1 tablespoon chat masala
10. 1 tablespoon Black salt
11. 1 teaspoon red chilli powder
12. 1 teaspoon dry mango powder
13. Salt as per taste

Method
1. Firstly soaked beans for 4 hours then boiled it in pressure cooker adding sufficient water and salt.
2. Then take grinder put mint leaves, coriander leaves, tomato and all spices and grind it.
3. Then this paste mix in yoghurt.
4. Now take bowl put boiled Beans, chopped capsicum and yoghurt mixture and mix it properly.
5. Garnish with corn and mint.

Corn Cannelloni
Preparation time- 15 minutes
Cooking time- 10 minutes
Total time- 25 minutes
Serving- 4

Ingredients
For Filling
1. 1 cup boiled corn
2. 1 cup paneer crumbled
3. 1 teaspoon red chilli powder
4. 2 tablespoons chopped capsicum
5. 1 cup tomato sauce
For Dough
6. 2 cups all purpose flour
7. 2 tablespoons oil
8. Salt as per taste
For Cream Sauce
9. 1 cup cream
10. 1 tablespoon cornflour
11. Salt as per taste
12. 1 cup grated cheese

Method
1. Make a dough with the dough ingredients and keep aside for 10 minutes.
2. Then take filling ingredients and mix it nicely and keep aside.
3. For cream sauce mix all ingredients and cooked in non stick pan, when getting thicken switched off the flame.
4. Now make a thin roti with dough and cut three pieces of roti in square.
5. Now take one square of roti and place some filling over it and fold over to make a roll.
5. Place this roll onto the greased dish of microwave.
6. Now spread cream sauce over it properly.
7. Then spread chesse over it and sauce.
8. Now baked in microwave for 5 minutes.
9. Then take it out from Microwave.

Beans Spanich Rice
Preparation time- 10 minutes
Cooking time- 5 minutes
Total time- 15 minutes
Serving- 4

Ingredients
1. 1 cup boiled rice
2. 1 cup boiled Spanich
3. 2 cloves of garlic finely chopped
4. 1 green chilli finely chopped
5. 1/2 cup boiled kidney beans
6. Salt as per taste
7. 2 tablespoons oil

Method
1. Firstly heat the oil in a pan, add the garlic and green chillies and saute it for 1 minute.
2. Then add rice, spinach, beans and salt and sauté for 3 to 4 minutes.
3. Then switched off the flame.

Baked Spaghetti with Paneer Balls in Spanich sauce
Preparation time- 20 minutes
Cooking time- 15 minutes
Total time- 35 minutes
Serving- 4

Ingredients
For Spaghetti-
1. 1 cup boiled spaghetti
2. 1 tablespoon butter
3. 1 tablespoon finely chopped onions
4. 1 chopped green chilli
5. Salt as per taste
For Paneer Balls-
6. 2 cup crumbled paneer
7. 1 bread slices soaked in curd
8. 1 tablespoon chopped coriander
9. 1 tablespoon finely chopped green chillies
10. 2 tablespoons all purpose flour
11. Pinch of sweet soda
12. Salt as per taste
For Spanich-
13. 1 cup blanched spanich
14. 2 tablespoons cream
15. 1 cup grated cheese

Method
For the spaghetti-
1. Firstly heat the butter in non-stick pan thrn add the onions and sauté it for 2 minutes.
2. Then add green chillies, spaghetti and salt, mix it properly and saute it for 5 minutes.
3. Then make puree of Spanich and add cream and mix it nicely.
4. Now put the Spanich sauce in spaghetti and saute it and switch off the flame.
For the paneer balls-
5. Take Paneer, bread slices, coriander leaves, green chillies, all purpose flour, soda and salt and mix it nicely.
6. Then make small balls.
7. Heat the oil and deep fry all balls like golden brown.
Assembled for baking-
8. Take microwave bowl grease it.
9. Then put spaghetti then paneer balls spread chesse over it.
10. Then baked in microwave for 5 minutes.

Vanilla Panna Cotta
Preparation time- 5 minutes
Cooking time- 10 minutes
Setting time- 10 minutes
Total time- 25 minutes
Serving- 4

Ingredients
1. 1 tablespoon gelatin
2. 2 tablespoon water
3. 2 cups heavy cream
4. 1 cup milk
5. 1 teaspoon vanila essence
6. Sugar as per taste
7. 2 tablespoons strawberry sauce

Method
1. Pour water into a small bowl add gelatin and keep aside for setting.
2. Than in a pan stir together heavy cream, sugar, milk and vanila essence and Boiled it.
3. Then add gelatin and stir it continusally for 5 minutes.
4. Now pour it into bowl and keep it for 10 minutes for setting.
5. After that drizzle the strawberry sauce over it.

Coffee Cocktail
Preparation time- 5 minutes
Cooking time- 5 minutes
Total time- 10 minutes
Serving- 2

Ingredients
1. 1 tablespoon coffee
2. 2 tablespoons heavy cream
3. Sugar as per your taste
4. 1 cup milk

Method
1. Blend the coffee, sugar, milk in blender.
2. Pour it into glass and put cream over it.
